Grandpa By’s Applesauce

This recipe hits home every fall! I grew up with my Grandparents brining down jars and jars of the-best-appleauce-ever! They had a huge Gravenstein apple tree in their back yard and every fall they would pick the apples and my grandpa would spend hours in the kitchen (he did all the pureeing by a hand food mill) making the liquid gold. No other applesauce could compare, the sweetness with the light tartness and the warmth of the cinnamon made it unbeatable.
My grandparents are no longer with us, so I have carried on the family tradition with my 4 children. We don’t have a huge Gravenstein tree in our backyard, but I have found that maybe it wasn’t the apple, but the love that made it taste sooo darn good.

Ingredients
20 apples, Gravensteins, pink lady, honey crisp… use a variety, cored and cut into 4ths
2 cups apple juice
2 1/2 -4 Tablespoons cinnamon
1 Tablespoon lemon juice, freshly squeezed
Instructions
In a large stock pot add apples and apple juice. Put over medium/high heat.
Cover and cook for about 1 hour, stirring occasionally.
Once apples are soft, stir in cinnamon (add more or less depending on your taste) and lemon juice.
Leave chunky or put into a blender and blend until smooth.
Put into freezer safe jars. Keep in the fridge a few weeks and freeze for up to a year.
