4th of July Pancake Platter

Description

Festive 4th of July pancake recipe.


Ingredients

  • 1/2 cup buttermilk
  • 1/2 cup milk
  • 2 Tablespoons butter, melted (+ more butter for greasing the pan)
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 Tablespoon syrup
  • 1 cup AP flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon kosher salt
  • 2 cups strawberries, sliced in half and cored ( I used smaller ones)
  • 1 cup raspberries
  • 1 1/2 cups blueberries
  • syrup
  • sprinkles 

Instructions

  1. In a medium mixing bowl whisk buttermilk, milk, 2 Tablespoons butter, egg, vanilla and syrup until well combined.
  2. Stir in the flour, baking powder and salt to the wet ingredients. 
  3. Pre-heat your pan or griddle over medium heat.  
  4. Liberally butter your pan.
  5. With a spoon, dollop and spread the batter onto the pan making a small square shape. Use the tip of the spoon to help make the corners.
  6. With the same spoon, dollop the batter in a line to form the stripes.
  7. Once most of the bubbles have popped, add the blueberries in straight rows to the square pancake. Flip the pancake. Cook a minute more.
  8. Once the bubbles have popped no the stripes flip them and cook a minute more. 
  9. Put cooked pancakes on a platter or plates. 
  10. To serve place berries, syrup, sprinkles, strips and star pancakes on the table and let your guests have delicious fun!
