These little biscuit bites are perfect for your next brunch, you can serve them as an easy appetizer for your guests or a quick but nutritous breakfast on the go for your family!
I go to a bible study on Tuesdays and made these for the group and they were a huge hit. I am not a morning person so I bake the biscuits and scramble the eggs the night before. The morning of, I assemble them and warm them in a 350 degree oven for about 5-10 minutes.
The biscuits are home made which is really the secret here – but don’t let that intimidate you – biscuits are actually really easy to make and only take about 8-10 minutes to bake. You can do it!
One thing I want to point out is that I use spelt flour in this recipe instead of traditional all purpose flour. Why does this matter? I am always looking or ways to help make my recipes better for you without sacrificing flavor or texture, taste is the whole point after all!
Spelt is an ancient grain flour that is high in vitamins and minerals and highly water soluble, making it easier to digest. I use it in place of white or wheat flour for its health benefits and I think it gives the biscuits a light, airy texture. Win-win!
