Kale Ceasar Salad

Jump to Recipe

This Kale Caesar is so delicious that it’ll turn a “kale skeptic” into a “kale believer”.

Kale Caesar salad with parmesan crisp and lemon wedge.

This recipe features my homemade Caesar dressing that’ll take you literally two minutes to whip together and it tastes so much better than what you’ll find at the store! We’re adding parmesan cheese to the dressing which adds a really great depth and umami flavor to the dressing. What is umami flavor you ask? It’s one of the five basic flavors and is actually Japanese for “a pleasant savory flavor”.

Quick Tip for Kale – Cut the leaves off the stock is easy if you cut along the stock as pictured.

There are several types of kale, I like to use green curly, Tuscan kale or red kale for this salad. Kale is a very hearty plant and doesn’t easily wilt, so you don’t have to worry about tossing it with the dressing too soon. If you don’t have kale around (or if you’re a hard core skeptic) of course you can always substitute the classic romaine lettuce.

Parmesan crisp which is made of baked parmesan cheese also called a parmesan frico.
Parmesan Crisp – This is a delicious, must have addition to the Kale Caesar salad.
