This Kale Caesar is so delicious that it’ll turn a “kale skeptic” into a “kale believer”.
This recipe features my homemade Caesar dressing that’ll take you literally two minutes to whip together and it tastes so much better than what you’ll find at the store! We’re adding parmesan cheese to the dressing which adds a really great depth and umami flavor to the dressing. What is umami flavor you ask? It’s one of the five basic flavors and is actually Japanese for “a pleasant savory flavor”.
There are several types of kale, I like to use green curly, Tuscan kale or red kale for this salad. Kale is a very hearty plant and doesn’t easily wilt, so you don’t have to worry about tossing it with the dressing too soon. If you don’t have kale around (or if you’re a hard core skeptic) of course you can always substitute the classic romaine lettuce.

Ingredients
- 1/4 cup parmesan (preferably parmesan reggiano), crumbled
- 1 small garlic clove, peeled
- 3/4 cup mayonnaise
- 1/4 cup olive oil
- 1 Tablespoon fresh lemon juice
- 1/4 teaspoon salt
- 5 cracks fresh black pepper
- 1/4 teaspoon anchovy paste
- 10 cups kale, washed, ribs removed and finely chopped
Instructions
- In the bowl of a food processor (I use my mini one for this), blend the parmesan and garlic until minced.
- Add mayo, oil, lemon, salt, pepper and anchovy to the bowl, puree until well incorporated.
- Toss with kale.
- Serve with parmesan fricos, and lemon wedges.
