Parmesan Crisps (Fricos)

These Parmesan Fricos are are so addicting, you won’t be able to eat just one…. I promise. The flavor is so addictive, thanks in large part to the “umami” flavor the parmesan packs.  If you can go for the good stuff, get Parmesan Reggiano, you won’t be disappointed! But either way you’ll want a block of parmesan that you can shred (no powered parm here).

What is a Frico you ask? It’s a fancy word for a ‘crisp’ made of baked cheese.

I love to serve these with my Kale Caesar Salad, they’d also be a welcome addition to an antipasto platter… and honesty, sometimes I just eat them straight off the baking sheet (shhhhh don’t tell anyone).

Parmesan Fricos

Description

This recipe makes delicious parmesan crisps, also known as parmesan fricos.


Ingredients

Scale
  • 1/2 cup parmesan cheese

Instructions

  1. Pre-heat oven to 375 degrees.
  2. On a parchment or sil-pat lined baking sheet make 8 little mountains of 1 Tablespoon each of parmesan cheese spacing a few inches apart.
  3. Take the back of the measuring spoon and lightly fan out each mountain into a round about 3 inches in diameter.
  4. Bake for 5 minutes on the upper rack.
  5. Allow to cool for 5 minutes. Carefully peel off and enjoy.

Notes

These will keep a few days in a airtight container in the fridge.
