Three Cheese and Blueberry Pizza with Basil and Prosciutto

What makes this recipe really quick and easy is to get pre-made dough from your local grocery store (I like Trader Joe’s Dough) and then add your blueberries, cheese and prosciutto and pop it in the oven and you’ve got homemade pizza in less than 20 minutes. You can of course make your own dough, too, checkout my pizza dough recipe.

We live in the Pacific Northwest and blueberries are very plentiful here, especially in the months of July and August. In fact we have so many that we don’t always know what to do with all of them! We have plenty of muffins, plenty of cobblers and I wanted to use blueberries in fun new way. That’s where I thought “hey everyone love’s pizza”, so why not throw the two together! After all, we put pineapple on pizza so why not try a different fruit on pizza like blueberries?

Tips and Tricks

  • Avoid soggy pizza
    When putting the cheese on the pizza, one thing you want to do is to make sure that your cheese is not too thick. For the mozzarella, you’ll want to slice is about 1/4″ thick, this way it’ll allow the cheese to melt nicely in the oven and cook evenly throughout. Also since we’re using fresh mozzarella, you’ll want to make sure and drain the mozzarella before putting it on your pizza. This will help make sure that your pizza isn’t soggy in places and the crust crisps up underneath.
  • Rolling out the dough
    Make sure that your dough is brought to room temperature before you roll it out, it’ll make it much easier for the dough to roll out. If you’re making your own dough, you’ll want to make sure and give yourself a resting period before trying to roll it out.

How do I cook the pizza to get it to turn out like it does in the restaurants?

You don’t need to go out and get a specialty pizza stone or pizza oven, they’re great and they do make a great pizza, but you can get great results from your home oven. Make sure to get your oven pre-heated to 500 degrees, get a good quality rimmed baking sheet and put the pizza in the center of the oven.

You’ll want to keep an eye on the pizza as it cooks as every oven is different, about half way through the cook time check and see how the pizza is cooking. If you see the cheese getting too bubbly and brown on top, move it down to the bottom rack, and likewise if the crust is getting too crisp on the bottom move it up to the top rack.

A perfectly cooked pizza has nice, crisp crust with cheese that’s melted, gooey and all nice and brown on top!

What can I serve with the pizza?

Since this is a summer themed recipe I’d suggest pairing this pizza with my Blueberry Mojito that would go really well with this, it’s nice and light and refreshing. I’d also add a simple arugula salad on the side that’d compliment the herbs on top of the pizza.

Three Cheese and Blueberry Pizza with Basil and Prosciutto

Ingredients

Scale
  • 2, 12inch rounds of pizza dough, raw
  • flour for rolling out dough
  • 2 tablespoons corn meal
  • 4 tablespoons olive oil
  • 2 cups fresh mozzarella, slices 1/4 inch thick
  • 2/3 cup ricotta cheese
  • 3/4 cup parmesan cheese
  • 1 cup fresh blueberries
  • 8 thin slices prosciutto di parma
  • 1/4 cup basil, roughly chopped

Instructions

  1. Put a pizza stone or cookie sheet in your oven and pre-heat oven to 500°.
  2. On a lightly floured cutting board, roll out both of pizza dough’s to about 12 inches in diameter.
  3. Lift up each dough and spread corn meal on the cutting board and place dough on top of corn meal.
  4. Spread the olive oil evenly over both doughs.
  5. Divide the cheeses and blueberries evening over both pizzas.
  6. Pull the pizza stone or cookie sheet out of the oven and with a pizza paddle or 2 large spatulas place the pizza’s on the hot sheet and return to the oven. Bake for 10-15 minutes.
  7. Remove the pizzas from the oven and top with prosciutto and basil, slice and serve.

Notes

  • You can make your own dough or buy it from the grocery store, I really like Trader Joe’s packaged dough or sometimes you can get dough from your local pizza parlor.
  • When buying prosciutto, make sure to get prosciutto di parma, it’s texture and flavor make all the difference.
  • You can add more or less ingredients to each pizza based on your preference!
