4th of July Pancake Platter This is the perfect way to start your 4th of July off with a BANG! These fun and playful pancake platters are not only delicious, with berries and syrup, but are also a fun and festive presentation that your friends and family will love. And for the kids, add some sprinkles on top and let the "fireworks" fly.

We made these for the blog and my kids had so much fun assembling these and creating their own flag master pieces.

How to Make It

To get started, make my Perfect Pancake Batter (recipe below) and then you'll want to heat a pan or skillet to medium heat. We're going to make the pancakes into strips which will be our "stripes" and then we'll make a few square pancakes and add some blueberries to them for the stars. You'll also want to cut several strawberries in half which you'll also use for the stripes. Once you've made the Stars and Stripes pancakes, you can have your kids help assemble their pancake platter and they can create their own flags out of the pancakes and strawberries as stripes and the blueberry pancake as the stars. Ingredients

1/2 cup buttermilk

1/2 cup milk

2 Tablespoons butter, melted (+ more butter for greasing the pan)

1 egg

1/2 teaspoon vanilla

1 Tablespoon syrup

1 cup AP flour

2 teaspoons baking powder

1/4 teaspoon kosher salt

2 cups strawberries, sliced in half and cored ( I used smaller ones)

1 cup raspberries

1 1/2 cups blueberries

syrup

sprinkles

Instructions

In a medium mixing bowl whisk buttermilk, milk, 2 Tablespoons butter, egg, vanilla and syrup until well combined.

Stir in the flour, baking powder and salt to the wet ingredients. 

Pre-heat your pan or griddle over medium heat.  

Liberally butter your pan.

With a spoon, dollop and spread the batter onto the pan making a small square shape. Use the tip of the spoon to help make the corners.

With the same spoon, dollop the batter in a line to form the stripes.

Once most of the bubbles have popped, add the blueberries in straight rows to the square pancake. Flip the pancake. Cook a minute more.

Once the bubbles have popped no the stripes flip them and cook a minute more. 

Put cooked pancakes on a platter or plates. 

To serve place berries, syrup, sprinkles, strips and star pancakes on the table and let your guests have delicious fun!

Tips & Tricks

  • Making Pancakes Make sure you don't spoon too much batter on for the stripes or the strips will be too thick.
  • Use the tip of the spoon to coax the batter into the shape you want.
  • Make sure to push the blueberries into the pancake so they stick when you flip the pancake!
